MAKE YOUR OWN GARLIC DIJON VINAIGRETTE

*You can throw in chopped herbs or a few tablespoons
of grated parmesan cheese or a shallot instead of garlic
It's really easy to make a simple and delicious vinaigrette. It takes only a couple of minutes and is far healthier than anything processed.

It's a mixture of olive oil, lemon juice, garlic, and  dijon mustard.

Ingredients
2 cloves garlic, minced
1/2 tablespoon smooth dijon mustard
1 tablespoon lemon juice
3 tablespoons olive oil
salt
freshly ground pepper

Directions
1.Whisk together the lemon juice, mustard, pepper, salt & garlic.
2.Slowly whisk in the oil, whisk until you can see it has fused and is slightly thicker.
Makes about 1/4 cup.
